Healthy Recipe: Pan Seared Deep Sea Scallop

Try this healthy seafood recipe created by The Medical Center of Plano Chef Miguel.

Happy Cinco de Mayo!  Here’s a healthy and delicious recipe with a southwest flair from our fabulous TMCP Chef Miguel.  

Pan Seared Deep Sea Scallop
Serves: 4
  • 2 oz fresh papaya, diced
  • 2 oz fresh mango, diced
  • 2 oz cucumber, peeled and diced
  • Handful chopped fresh cilantro
  • Fresh squeezed juice from 2 limes
  • 2 jalapeño chili (or green chili), seeded and minced
  • Salt and freshly ground black pepper to taste
  • 1 lb deep sea scallops, rinsed, drained and dried with a paper towel 
  • Fresh mint or cilantro leaf for garnish 
Combine the papaya, mango, cucumber, cilantro, lime juice and jalapeño. Season to taste with salt and pepper, refrigerate for at least a ½ hour.
Heat olive oil in a skillet or frying pan over high heat. Add 4 scallops to the pan and sear on all sides (about 2 minutes for each side).  
Remove scallops from pan and set aside. Place a little of the mango salsa in the middle of the plate and then place the seared scallop gently on top of the salsa and garnish with a fresh cilantro or mint.
 Serve hot and enjoy!
